Most archaeologists believe cheese was first “discovered” when milk was stored and carried in the stomach of an animal. When the milk mixed with the rennet present in the stomach, the milk separated into curds and whey. The first cheese thus produced would have been soft, white, and virtually tasteless, somewhat like modern cottage cheese.
